Gluten Free Baked Apple Cider Donuts *RECIPE*

Who else has happy, nostalgic memories of running around a pumpkin patch and your mom finally agreeing to let you get a donut on the way out? I’m sure it’s not just me!

Even thinking about apple cider donuts brings me back to bright blue skies, the earthy smell of fragile, brown corn stalks, and a chilly autumn breeze. Oh, and if you’re from the Midwest, you’ll probably also recall giant pits of corn that kids get to play in. That, my friends, is bliss.

As many of you know, I got diagnosed with celiac disease in 2016. Since then, a few autumns have rolled by cider donut-less and sad (jk, but.. only a little). This year, I realized I have a donut pan, and why the hell aren’t I making gluten free cider donuts at home!?

So, I did.

And let me tell you: nothing beats the smell of a freshly-baked, cinnamon-laced donut on a crisp, autumn day. Or evening. Or summer, who cares?!

Gluten Free Baked Apple Cider Donuts

Baked apple cider donuts without the gluten and with all of the nostalgia.

  • Stand mixer
  • Donut Pan


Donut Base

  • 1 1/2 cup spiced apple cider I added cinnamon to my cider
  • 1 egg
  • 2 tbsp unsalted butter
  • 1/2 cup cane sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup milk I used oat milk
  • 2 tsp vanilla extract
  • 2 cups gluten free flour I use Bob's Red Mill 1:1 Gluten Free Baking Flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp allspice
  • 1/4 tsp cloves

Cinnamon & Sugar Coating

  • 1/2 cup cane sugar
  • 1 tbsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp cloves
  • 6-8 tbsp melted butter


Apple Cider Reduction

  • Pour your apple cider into a saucepan and cook on a low-medium heat; let simmer for 15-20 minutes, or until reduced to about 1/2 cup
  • When cooked down to about 1/2 cup, pour into measuring cup and let cool slightly.
  • If your apple cider is not spiced, that's fine. You can add a cinnamon stick while it simmers if you want it to be spiced.


  • While your apple cider is reducing, heat oven to 350 degrees F
  • Mix apple cider, egg, butter, brown sugar, cane sugar in large bowl with stand mixer or hand mixer until fully incorporated.
  • In separate bowl, stir together flour, baking soda, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. Slowly add to wet mixture. Batter will be thicker than traditional cake batter.
  • Spoon mixture into donut pan cavities. A piping bag or a plastic bag with the corner snipped off is useful here, but not necessary.
  • Bake for 12 minutes or until donut bounces back when lightly pressed.
  • Let cool.

Cinnamon & Sugar Coating

  • Mix together cane sugar and spices in a small bowl until fully incorporated.
  • Melt 6-8 tbsp of butter.
  • Quickly dip the top and bottom of the donut in the melted butter and then dip into sugar and spice mixture.
  • Enjoy!
